POLK SALAD

In the days when I lived in the country I learned to eat most of the cuisine served in the south. The more prudent of the southern girls learned to can food in the summer to eat in the winter.

This required a big garden, which the farmer would cultivate the soil and help plant the seeds or vegetable plants. Usually after this the garden chore was turned over to the women folks.

The garden hoe was the tool of choice as the weeds were persistent and had to be dealt with most vigorously. Some of the favorites for canning were corn, green beans, okra, tomatoes, several kinds of fruit, including berries and several kinds of greens such as turnip and mustard, and the very important polk salad.

There were places where polk salad grew without being planted. Every year it would come back by itself and was a delicacy.

Each year in the winter, we killed enough hogs to last the year and cured the meat so it would last without spoiling. The greens seemed to nullify the effect of the large amount of pork we ate.

Sweet potatoes were a late crop so we enjoyed them on toward thanksgiving. By digging a large hole in the ground and lining it with straw you could save Irish potatoes by placing them in the hole and covering them with straw and dirt.

During the winter you would dig out enough to last for a few days. The fire place had a swinging hook for a cast iron pot so you could make homemade hominy or cook whatever you wished during the winter for there was always a fire in the fire place.

From the cows we had milk and butter. We made bread from flour and corn meal. The chickens provided eggs and Sunday dinner.

These are just a few things that help us survive hard times along with many other things such as the watermelon and cantaloupe patch, corn and hay for the live stock.

Selling milk for extra cash and the tobacco crop which brought in money around Christmas time was also part of taking care of ourselves.

This lifestyle caused me to be self sufficient during my life so far. I know there are many more that have had a similar upbringing, and have trouble with the way the things are today.

If some of you want to try some real polk salad (not the canned kind) let me caution you, I knew a guy that ate too much of it and he started having fits that would cause him to shake and holler, check out the URL below to see him.

TRIPPING

Imagine this! A man who lives in the land of Israel in the year AD 33 and he hears the word that there are good jobs in Jerusalem. Since he has no family, he makes a decision to load up what few goods he has on his donkey and head south. The country side has been in turmoil for the last two years, and he decides today was a good time for a new start.

Even though most of the people in the land are Jews, it is a “dog-eat-dog” society, with everyone looking out for themselves and family. He had seen Roman soldiers before, but had never seen so many in one place. The crowds either moved out of their way or got knocked down and ended up being hurt.

It was time to find a place to live for the streets were not safe, the stables charged too much for boarding his donkey, so it had to be sold immediately. The donkey brought a good price thus he didn’t feel too bad about letting him go.

He had never dreamed about so much activity in any city. With the Roman garrison stationed there with thousands of soldiers, the temple worship and sacrifices with all the attendants, and all the people, it was a mad house.

The city also had a bad smell because of all animals, people, sewage and rotting waste lying around. If you wanted a breath of fresh air you had to leave the city and head for the country, but who had time for that.

Since you have got to know our man you should know that his name is Samuel but we will call him Sam.

All new comers to the city were required to enroll and prove who they were, because at any time the soldiers might question you, which was often. Another thing that was new to Sam was the taxes, which he had never paid in the past.

Since he had little to do, Sam was talked into joining a group that was excited about some guy that had just been executed, and supposedly had come back to life. He liked these people because they were ecstatic, and each one had a thrilling story about how they knew this guy.

Over the next few days Sam was convinced to become one of the group, and to become a follower of this man they called Jesus. With them it was Jesus this, and Jesus that, so much so that you simply got a little tired of it.

Now it was time for one of the Jewish feasts called Pentecost, so as many as possible went to the temple for the ceremonies. A strange thing happened that day which changed Sam’s life forever, and the group grew from a few persons to literally thousands.

There were a few standout men and women who took over and seemed to run things as leaders.

Everybody pooled their money, and it was redistributed with equal shares among the people. This worked for awhile, but after a short time, the money was getting low, and the leaders were accused of playing favorites. The Jews from other areas claimed they were not getting their fair share, and refused to put any more money in the pot. The rich had given all their wealth and now they were poor. The poor were claiming they had the right to their share even though they had contributed nothing.

Those who had jobs and worked decided their families need to be cared for, and demanded that the so called poor would need to get a job, and take care of themselves. This didn’t set too well with the freeloaders, and they tried to quote Jesus words about loving each other, in order to put the working class on a guilt trip, however this was received very coldly.

Finally Sam had enough of all the politics, all the fighting and squabbling, and decided to return home, and help build a group in his home town; where each man would bear his own burden. He was overjoyed with his new found faith, and shared this experience with anyone who would listen.

There were perilous times ahead, but Sam and others had put all their trust in this man called Jesus.

USED AND ABUSED

In the first four chapters of Genesis the ground work was laid, this took the rest of the Bible to explain. The creation of the basic structure of the universe was put into place.

Adam and Eve were instructed in how to live acceptably in GOD’s sight. Logic would seem to indicate that the local friendly serpent had been deceived by Satan and this allowed him to be used to ruin man’s relationship with GOD.

Not only did Adam and Eve lose favor with GOD, the serpent also was cursed. Meanwhile Adam and Eve hid in the bushes. When GOD had ferreted them out of their hiding place, He spoke to them in a tone they had never heard before. The confrontation ended with the words “get out of the garden.”

They were evicted without notice and with no recourse. I believe that not only did man get kicked out but also all the animals, including the snake had to hit the road.

Perhaps a short profile of the snake would be in order here. We only know a few things about him from the narrative, but what we do know can lead us to speculate about his downfall.

First of all he was wiser than all the animals, and this led him to a position of pride. He considered himself to be far more intelligent than the other creatures.

There was a prideful entity in heaven that also was evicted, and seemingly he didn’t go peaceful. His abode is now in the atmosphere from where he exercises his remaining power. The serpent, because of his pride found a simpatico relationship with Satan and agreed to do his bidding, which led to his part in man’s fall, and also to his own downfall.

Now Adam and Eve found difficulty in adjusting to their new surroundings, but just think of the trauma suffered by the serpent. He apparently must have been upright before his fall; otherwise having to go forth on his belly wouldn’t have been a big thing. When GOD spoke to the serpent he was speaking beyond him, even to Satan himself, the bruising of the serpent’s head was indicative of the redemptive process that didn’t include Satan. While the serpent didn’t like it; both GOD and Satan understood it.

The death and resurrection of Christ potentially redeemed mankind from spiritual death, and will eventually restore all else that was lost by the fall. But at present the pronouncements made by GOD are still in effect.

Some of these include physical death, pain in child birth, and physical labor in supporting oneself. There were other psychological effects that were even more difficult to bear.

Today, if the serpent had kept his mouth shut, and Eve hadn’t got hungry for forbidden fruit, and Adam had been able to think for himself, all politicians would be out of business and I wouldn’t be getting all these phone calls telling me to vote for so and so. Oh well, life goes on!

What was Eve’s favorite song after being cast out of paradise?

WHAT EVER HAPPENED TO - - -

What happened to S.H. Kress AKA Kresses. When I was young I would take the streetcar downtown to shop, and one of the favorite stores was Kresses. It had three floors, and was an upscale five and ten. There was a fountain with sandwiches and drinks. The store was started in 1887, and lasted for about 100 years, and then it was gone. Today most people have never heard of Kresses since it has faded into the past.

Another one of my regular shopping haunts was F.W. Woolworth. They had all the important stuff for kids such as roller skates, games and candy. They started in 1879 and closed in1997.

Montgomery Ward had a seven story retail/mail order store about six blocks from my house. Wards had a lot of things I would like to have, if I had the money, so mostly I did a lot more looking than buying. Wards was started in 1872 and lasted as a retailer until 2001, but now only does some mail order and internet business.

These were very strong businesses that lasted for a hundred years, but are now gone. They were victims of the changing times.

Not only are the older retailers closing, newer stores like Circuit City also have closed.

Another thing that is gone is penny candy, for a nickel you could get a case of hyperactivity that could for hours. Anything advertised as penny candy today is not the real mc-coy. All regular size candy bars were three for a dime at Safeway, but that was then and this is now.

2000 years a man named Jesus started the business of saving souls in fulfillment of promises made by GOD in the Garden of Eden; “The seed of woman would crush the serpents head.”

This business is alive and well today. While it has kept up with modern advancements to spread the message, the one thing it cannot afford to neglect is the hands on personal touch. Abstract Christianity will not survive. There must be the interaction among brethren, ministry to one another, other wise it will join the businesses that are only a memory.

Jesus spoke in the book of John chapter 15:12 This is my commandment, that you love another even as I have loved you.

This is made easier if you know and understand that Jesus loves you!

SIGNS AND BLUNDERS

I remember when I was a young man, and couldn’t obey the speed limit. The result was that I received three speeding tickets within a month. The judge decided I didn’t need to drive anywhere except to work. So for the time restricted, I was to allow my wife to drive wherever we went, while I held the baby. It was humiliating, and amazing how quickly I learned to conform to the speed limits.

God is very liberal, but He has placed some limits on us, that He insists we observe. Otherwise He must teach us that it is better to obey than it is to sacrifice, in order to receive his blessings. He gives us signs to follow - - -

There are the Stop signs. The Spirit of GOD at times will inform us that it is time to stop and go no further. Those who ignore this sign will be enrolled in the school of the Spirit for discipline.

What about the Yield signs? These are there for instructions concerning when to yield to GOD regarding an issue, and when to yield NOT (to temptation,) for to do so is sin.

Something relatively new is the Roundabout signs. When obeyed they will help you get to where you are going faster; as long as you exit in the direction you need to go. It is not to be treated as a merry-go-round where you continually go round and around, and up and down.  While you may be entertained, you will never get anywhere with GOD directions until you get on with the task, and not simply mark time.

GOD has put “No Parking” signs all along our road to our heavenly home.

We are never to bypass the Dead End sign, for it will lead to nowhere, and will accomplish nothing. The dead end, will in no way promote GODS program.

When driving I look for the signs, and follow the signs guidelines for they are placed there for my good,

The “One Way” sign tells me to travel only in the direction indicated.

Jesus declared Himself to be The Way, and the only way. There is no other approach to heaven, for there is only one way.   He is the Way.

Then there are the Signs of the Times, for the return of the Lord is swiftly approaching.

There is also something else I look for more earnestly, and that is the Signs and Wonders from GOD, where he manifests Himself in his power and glory for my benefit.

The greatest sign of all is the sign of the cross where I kneel and cry glory and while giving glory to GOD I get a glimpse of heaven and rejoice.

THE WAY and The Means

In the following Bible verses found in first Timothy, we are warned about what amounts to covetousness, and in the book of Ephesians, covetousness is also coupled with fornication, uncleanness, and Idolatry.

1Timothy 6:8 If we have food and covering, with these we shall be content.

1Timothy 6:9 But those who want to get rich fall into temptation and a snare and many foolish and harmful desires which plunge men into ruin and destruction.

1Timothy 6:10 For the love of money is a root of all sorts of evil, and some by longing for it have wandered away from the faith and pierced themselves with many griefs.

There is a secret place in man where the truth of who we are is exposed. It is the place where nothing is hidden, and where we deal or don’t deal with our weaknesses. This is the place where the total composite of who we are is revealed. A collage of the sum total of self is shown without filters.

Here we find the HOLY SPIRIT indwelling, Illuminating, pointing out that, which would be hurtful to you, should it be manifested outwardly.

Some have expressed this act of the SPIRIT by saying; ”GOD is not through with me yet”.

This secret place in man is the area where the love of money can take control and will add “all sorts of evil.”

This is an inward attitude concerning money, but there is another side of money and that is; it is the MEANS by which the gospel is spread abroad.

There is one man who this year is responsible for the Production of 115 movies. Two years ago one of his movies grossed 228 million dollars.

Today the spread of the gospel is hindered by the lack of money.

Money is power. Power to spread the Word of GOD to every person.

Jesus is the WAY, Money is the MEANS. Pray that the LORD of the Harvest will send forth laborers into his harvest, and pray they will have the means to go where they are sent, and to get the job done.

VICTIMS OF TIME

Death, taxes, and childbirth! There's never any convenient time for any of them. So many things to do, so little time to do it. This is the lifestyle of most people today. It makes you wonder how they find time to get into so much trouble.

Kids have to have the I.Q. Of a genius to get a passing grade today. They have more home work than I did as a student.

The psalms were written by those who took time, made time for meditation on the things of the Spirit. A good example of one who practiced this was Mary the mother of Jesus.

In Luke 1:46 Mary says, “My soul doth magnify the LORD.” As she continued to praise GOD it flowed out from within without having to “work it up” it was a result of taking time as the song says; Take time to be holy (to be set apart).

Take time to be holy, speak oft with thy Lord;
Abide in Him always, and feed on His Word.
Make friends of God’s children, help those who are weak,
Forgetting in nothing His blessing to seek

Take time to be holy, the world rushes on;
Spend much time in secret, with Jesus alone.
By looking to Jesus, like Him thou shalt be;
Thy friends in thy conduct His likeness shall see.

Take time to be holy, let Him be thy Guide;
And run not before Him, whatever betide.
In joy or in sorrow, still follow the Lord,
And, looking to Jesus, still trust in His Word.

Take time to be holy, be calm in thy soul,
Each thought and each motive beneath His control.
Thus led by His Spirit to fountains of love,
Thou soon shalt be fitted for service above

By choice you can go about, doing your tasks and still be in contact with the Lord. If your computer is always on you have instant use of it but you turn it off then it has to boot up and load your programs before you can make contact with the outer world. In the same way unless you keep your communication line open with GOD, it may be awhile before you get GODS attention.

The Mormon choir sings; Take time to be holy.
